Mama's Smothered Fried Chicken

1 cut Fryer..or what ever pieces of chicken you like
Self Rising Flour
Vegetable Oil
Salt and pepper to taste ...any other spices you like also

Brown chicken in vegetable oil and remove from pot. Add Self Rising flour, (a couple of tablespoons) for however much chicken you are cooking... the flour will make the gravy that will smother your chicken. Continue stirring flour until brown. Add water(for as much gravy as you like). Place chicken back into pot and cook until done and tender.

Serve over rice or potatoes.

You need to add flavor to your mama's fried smothered chicken. Before frying chickening marinate chicken in a plastic bag with salt, pepper, onion and garlic powder. Let stand for 30 mins. to 1 hour in the fridge. Take out fridge and coat chicken with flour. Fry chicken in a cast iron frying pan. After chicken is done set aside. Remove oil from pan except for about 4 tblsp. add 1 medium slice onion to the oil. Cook onions until tender add 3 tblsp. of flour to onions and oil cook until brown. The texture of the mixture should be creamy if not add more oil to the pan. Too speed up the the process add a little soy sauce to give it a brown color. Add enough warm water to thicken the gravy. For a rich creamy flavor gravy I add some can milk to the gravy. Enjoy.

Your method is correct. But that sounds like the chicken will be bland (no favor). When I do smothered Fried Chicken. I season my chicken with salt, pepper, season salt, old bay seasoning in a plastic bag and like marinade in the fridge for about an 1 hour. Then I coat chicken with flour and deep fry it in a black cast iron frying pan. After chicken is done I pull the oil out of the pan except for about 2 tblsp. and add 1 medium slice onion into the oil. Cook onions until tender then add the flour mix well until onion are coated with flour. I add warm water to onion flour mixture to create the gravy. For a richer flavor I add just a little can milk to give it a rich creamy flavor. You talking about something good. This will make you want to slip your moma....enjoy.

Thanks for your comment...this is an old family recipe...actually it's not a recipe...we just do it. I forgot to add the salt and pepper to taste and any other spices you like. I cook from scratch and don't use many recipes so I add all types of spices along the way. However, to this dish...I never add the cooked onions even though that sounds good. I also just brown the chicken without flour and frying...it just makes it to mushy to do it this way.I do add onions to country fried steak just not this one.

Thanks for pointing out that I forgot to add the spices...it would have been very bland without them...use a lot of pepper to chicken and gravy!
